This sandwich is inspired by Whole Foods Deli
DIRECTIONS:
1. CUT ZUCCHINI INTO SMALL SQUARE PIECES
2. GRILL THE ZUCCHINI & SQUASH (PAN- LOW HEAT)
3. CUT (CIABATTA BREAD IN HALF + 4 CUCUMBER SLICES)
4. PUT BABA GANOUSH ON ONE HALF OF THE BREAD + HUMMUS ON THE OTHER PIECE OF BREAD
5. PLACE GRILLED ZUCCHINI + SQUASH ON ONE HALF OF THE BREAD
6. ADD ARUGULA, 4 CUCUMBER SLICES, PICKLED ONIONS, 3 SUN DRIED TOMATOES
7. OPTIONAL: ADD BLACK PEPPER AND THYME
8. PLACE THE OTHER HALF OF BREAD ON TOP, PUT IN PAN FOR 1.5 MINUTES ON EACH SIDE
9. ENJOY YOUR DELICIOUS TOASTED SANDWICH WITH SAUERKRAUT AND/OR GRAPES ON THE SIDE (OPTIONAL)
